About us
The Non Dos Philosophy
Non Dos is a much used short form of "non dosage", a term used in the champagne industry, meaning "without addition of sugar". Most champages (and cognacs, for that matter) have sugar added, as a form of make up to cover flaws, and to make the product more easy drinking. Our company name says it all: We don’t like this. We want a genuine product, pure and honest, and without the taste of oak or addition of sugar, acidity, tannin or aroma yeast.
We want wines which only shows two things: The fruitiness of the grape, and the terroir where it has grown.
All our favourite wines is made with spontanious fermentation. When you don't add cultivated yeast, you get a wine with more complexity and depth, and this leads to our firm conclusion; that spontanious fermentation is a quality criteria in wine production.
A Non Dos product has never any oak flavour, is very rearly produced with added yeast, and some of our products is even without added sulphur. For us, the ideal wine is made from pressed grapes, and nothing else!
